Asparagus Lasagna
Yield: 8
Ingredients:
4 lb. asparagus
1/3 cup butter
1/2 cup all purpose flour
5 cup milk
8 oz creamy goat cheese, (chevre)
1 tsp grated lemon, rind
1 tbsp lemon, juice
1 1/2 tsp salt
1/2 tsp pepper
15 lasagna noodles
2 cup mozzarella cheese, shredded
1/3 cup parmesan cheese, freshly, grated
Directions:
Preheat oven to 375 degrees F (190 degrees C).
Trim asparagus.
Cut stalks into 1-inch (2.5 cm) pieces.
In large pot of boiling water, cook asparagus for 3 minutes.
Drain and refresh under cold water.
Drain again.
Remove 1 1/2 cups (375 mL) asparagus tips. Set aside.
In saucepan, melt butter over medium heat.
Whisk in flour and cook, whisking, for 1 minute.
Gradually whisk in milk.
Bring to boil.
Reduce heat to medium-low.
Cook, stirring, for 10 minutes or until thickened.
Remove from heat.
Stir in goat cheese, lemon rind and juice, salt, pepper and nutmeg until cheese has melted.
Meanwhile, in large pot of boiling salted water, cook noodles for 6 to 8 minutes or until almost tender.
Drain and cool in cold water.
Remove and arrange in single layer on damp tea towel.
Arrange 3 noodles in single layer in greased 13- x 9-inch (3 L) glass baking dish.
Spread with 1 cup (250 mL) of the sauce, then one-quarter of the mozzarella. Repeat layers 3 more times.
Top with final layer of noodles and sauce.
Sprinkle Parmesan over top.
Bake in oven for 35 to 40 minutes or until light golden and bubbly.
Sprinkle reserved asparagus tips over top.
Bake for 5 minutes or until asparagus is heated through.
Let stand for 10 minutes before serving.

Wild Mushroom And Ricotta Lasagna
Yield: 6
Ingredients:
Bechamel Sauce (White sauce)
3 tbsp butter
3 tbsp flour
2 cup milk
1 pinch nutmeg
salt, to taste
pepper, to taste
freshly grated parmesan cheese, to taste

The Lasagna
1 lb. fresh lasagna noodles
2 tbsp butter
1 lb. assorted mushroom, sauteed
1 large onion, finely, sliced
1 large clove garlic, chopped
1 tsp chopped fresh thyme
1/8 cup chopped fresh basil
1/8 cup chopped fresh parsley
juice from half a lemon
freshly cracked black pepper
salt and pepper, to taste
1/2 lb. soft goat cheese, (about 1 cup), or ricotta
freshly grated parmesan cheese, to taste
freshly grated nutmeg, (optional)
Directions:
Bechamel Sauce
In a medium saucepan, over medium heat melt butter. Add the flour and stir with wooden spoon, until a paste forms.
Remove from heat and add the cold milk a little at a time while stirring well between each addition. Return to heat once all the milk is added and mixture is smooth.
Continue stirring over medium heat until sauce comes to a boil and thickens. Add a pinch of nutmeg and season with salt and pepper to taste.
Add some of the parmesan cheese and stir.
The Lasagna
Preheat oven to 350 degrees F.
Butter the bottom of a 9 x 13 x 2 inch baking dish. Cook pasta in boiling salted water until just al dente (about 4 min). Transfer to bowl with cold water to prevent sticking. Drain on towel.
In a medium frying pan heat ½ the butter and add onion and garlic and saute until translucent.
Transfer to a bowl. To same pan add remaining butter and saute mushrooms over high heat until mushrooms are golden and liquid has reduced. Add back the onions and lemon juice and cook for 1 minute. Add the fresh chopped herbs and freshly cracked pepper and salt.
Layer lasagna as desired starting with pasta and alternating with ricotta cheese and Mushrooms. Season well between each layer.
Finish with layer of plenty of cheese.
Bake lasagna in middle of oven for about 30-35 minutes or until golden.

Dinesh tu dileli receipe far chan ahe fakt 1 doubt..
Can u guide me please. mala sanga ki bake kartana cover karun bake karyacha ki uncovered?? and noodles thevun tyavar thar dyayche ka??(me tase kele hote), I baked it uncovered pan tyamule mala te jasta dry vatle.

ricotta 1 cup, 1.5 cup chopped spinach, 1.5 tea spoon red chilli(crushed)and italian spices, no boil lasagna sheets,pasta sauce, salt, olive oil.
ricotta, spinach, all spices ani salt eka mothya bhandyat mix karun gene.
square baking dishla telacha hat lavun tyat talala pasta saucecha patal thar dene tyawar lasagna sheets vertically thevne. chamchyane spinach-ricottacha thar dene tyawar thoda pasta sauce cha thar. ase thar sarva mix sampe paryanta ghalne varti shredded mozzrella cheese ghalun about 40-45 min bake karne at 350deg.
warun freshly cracked black pepper ghalun serve karne.
