Recipe: Risotto With Coconut Milk and Shrimp
Adapted from NY Times

1 tablespoon vegetable oil
1 cup short-grain rice, like arborio . Make sure you get the right kind of rice. Using basmati or Jasmine rice is disastrous.

1 cup dry white wine
1 can (14 ounces) coconut milk
1 cup diced tomato (canned are fine; drain well), optional
1 pound raw shrimp, peeled, deveined and diced - about 1/2 inch pieces.
If you peel the shrimp yourself, rinse the shells and boil them for 5 minutes in 2 cups water. You can use this instead of plain water, for additional flavor.
Salt to taste
1/4 teaspoon cayenne, or to taste
1/2 cup minced cilantro, or scallion, optional.

1. Put oil in a 10-inch skillet, preferably nonstick, and turn heat to medium-high. Add rice and cook, stirring occasionally, until rice glistens and sizzles, 2 or 3 minutes.

2. Add wine and let it boil away, stirring once or twice, until mixture is just about dry. Add a cup of hot water and repeat, stirring frequently. Add half the coconut milk and cook, stirring frequently, until it is just about gone. Add remaining coconut milk and repeat.

3. At this point rice should be nearly tender; if it is not, repeat process with another 1/2 cup water. Stir in tomato if desired, shrimp, salt and cayenne and cook until mixture is creamy and rice is tender but not mushy. If rice is still too crunchy for your taste, stir in 1/2 cup water and cook, stirring, until mixture is creamy again. Garnish with cilantro or scallions and serve.

Yield: 2 to 4 main course portions.

Make sure you serve this soon after cooking. It doesnt look or taste as appetizing once it cools down and is reheated.

Ing: 1.5 lbs fresh,ripe tomatoes,coarsely chopped,
8 Oz. fresh mozzarella chesse,cut into 1.5 inch cubes,
4 Tbsp. extra virgin olive oil,
1 or 1.5 tbsp red wine vinegar,
1.5 cup fresh basil leaves, washed, dried and shredded,
salt and freshly ground black pepper( to taste),
1 lb pasta(preferably penne, spaghetti will do),
1/2 cloves garlic(optional)finely chopped, a bit of hot pepper.


method:
1: an hour before your meal, using a woodden spoon , mix the mozzarella chesse, tomatoes,olive oil, and vinegar, garlic and hot pepper in a deep bowl.
2: season to taste with salt and black pepper.
3: cover a clean dishcloth and let it sit at room temp. for an hour or so.
4: add the basil and toss well.
5: cook the pasta.
6: drain the pasta and return to the warm pasta pot.
7: pour on the tomato mixture and toss. check again for seasoning.

You suggest to boil lasagne noodles before paying them in baking tray, in fact I was told to put those noodles as it is (directly from the pack) and then they put some white sauce or green sauce and then put filling.

Do you know how to make this white or green sauce?
BYW, what is this all purpose floor? Any other name, preferably Italian??

recipe:1) fry pan madhe olive oil gheun garam jhalyavar dry garlic flakes takavet.
2)nantar tyat dry red chillies takavyat.thode partun varil sarva bhaja takavyat.(except basil leaves and mozzarella cheese).
3)thoda vel zakun shijvave.nantar diced tomatoes takavet.
4)changle shijlyavar freshly grinded pepper,salt takave.basil leaves madhil 1/2 leaves bajula thevavit,for garnishing)
