Green Bean Casserole

1 can green beans, whole, sliced lengthwise, drained
1 can or jar small whole onions
2 tablespoons diced pimiento
1 can cream of mushroom soup
Topping:
1/4 cup fine bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons butter, melted
In a lightly buttered 1 1/2-quart casserole, combine green beans, onions, diced pimiento, and mushroom soup. Combine topping ingredients; sprinkle over the top of the casserole. Bake, uncovered, at 350 degrees for 25 to 30 minutes.

cheesy veggie bake:

1 egg (optional)
1 can of cream of mushroom or cream of chicken or cream of celery soup
3 to 4 cups of chopped mixed veggies (I use the frozen bag. it has carrots, peas, radishes, broccoli, cauliflower, and (sometimes) corn and run them through the mini chopper or sometimes even the blender. use minimum water though.)
salt, sugar and pepper to taste
1 1/2 cups of grated low fat extra sharp cheddar cheese.

mix all indredients together. if mixture is runny, then add a little bread crumbs to soak up extra liquid.
preheat oven to 350 degrees. pour the mixture into a greased oven safe casserole. bake for 30 to 40 minutes until cheese starts to bubble.
excellent meal with easy homemade garlic bread or tomato soup.

i have tried to reduce the amount of cheese by adding cream cheese or riccota but the original extra sharp cheddar is the best.
