In India u will get "UKADA" rice. That is same as Idli rice or boiled rice.

I dont think it needs to ferment for 12/18 hours in india, just keep it overnight at warm place. May be over fermentation is making the idalis yellow.

Use parboiled rice. Soak equal amount of rice and udad dal seperately for 8-10 hours. Grind both together to smooth batter. Leave overnight (8-10 hours) for fermentation in covered container in warm place. The batter may not rise noticeably but idly comes out fluppy. During cold season, preheat oven to 100 degrees F. Leave the container in it for required time.

mastani, yeast baddal me asa aikalay kee tyane peeth fugat, pan idalya kahi khas banat nahit. tyamule tyacha vapar karayacha ki nahi te tharav.
ajun ek gosht, paravach me kuthetari vachal, it was related to dahi, pan mala vatat te idalichyaa peethashee pan chalel. mhane hiravya miracha biya kadhun virajalelya dudhat takalyaa tar miracheechyaa ushmanka mule dahi agadi ek don tasat lagate, i think same thing should apply to idali batter.
