Green-Chile cheese puff

This recipe is similar to a crustless quiche.

4 fresh Pablano chiles ( about 3/4 pound)
2 Tb unsalted butter
(1/4) cup all-purpose flour
(3/4) tsp.salt, or to taste
(1/2) tsp. Baking powder
6 large eggs
1 cup non-fat cottage cheese
8 oz. Freshly grated Monterey Jack cheese -about 2 cups- I like Jalapeno cheese

Preheat oven to 350 degrees F and oil two 9-inch pie plates
Roast and peel chiles. If they are really hot, substitute bell peppers. Remove seeds and cut chiles into (1/2) inch dice. In a large bowl beat eggs until doubled in volume. Melt and add butter to eggs. Mix flour, salt, baking powder and add to eggs. Add cheese and chiles and stir well. Pour mixture into 2 pie plates. Bake in middle of oven until the top is puffed and golden brown and a knife comes out clean…about 30-35 min.

Serve cheese puff immediately. Try with Lousiana hot sauce. Serve with salad (next recipe)and a piece of crusty french bread.
(Louisiana hot sauce -look for this in grocery stores where they have tabasco sauce).

You can freeze any left-overs.
