Grilled French Bread

1/4 cup margarine or butter
• 2 tablespoons snipped fresh parsley
• 1 clove garlic, minced
• 1/8 teaspoon ground red pepper (optional)
• 1/4 cup grated Parmesan cheese
• 1 16-ounce loaf unsliced French bread


Directions

1. In a medium skillet combine margarine or butter, parsley, garlic, and, if desired, red pepper. Heat over medium heat until margarine is melted. Stir in Parmesan cheese. Cut French bread in half lengthwise.


2. Place bread, cut side down, on an uncovered grill directly over medium coals. Grill about 2 minutes or until toasted. Turn cut side up. Brush with margarine mixture. Grill for 1 to 2 minutes more. To serve, cut into 2-inch slices. Makes 8 to 10 servings.


Grilled Eggplant sandwich

Ingredients

• 2 medium green, red, and/or yellow sweet peppers
• 1 medium eggplant (about 12 ounces), cut into 12 slices
• 1 tablespoon olive oil
• 8 1/2-inch-thick slices French bread
• 4 ounces soft goat cheese (chevre)
• 1/4 cup Dijon-style mustard


Directions

1. Quarter the sweet peppers lengthwise; remove and discard the stems, seeds, and membranes.


2. Brush eggplant slices with oil. Grill eggplant slices and sweet pepper quarters on the rack of an uncovered grill directly over medium-hot coals for 4 minutes. Turn and grill 3 to 5 minutes more or until eggplant is tender and sweet peppers are slightly charred. Remove vegetables from grill; set aside.


3. Spread 1 side of each French bread slice with goat cheese and mustard. Layer 3 eggplant slices and 2 sweet pepper quarters on 4 of the bread slices. Top with remaining bread slices. Serve warm. Makes 4 servings.

One more interesting BBQ recipe -
BBQed Dessert ---

Take crisp pears, apples, peaches, Banana, pineapple slices, all or any one fruit will do.
Cut apples, pears, peaches in half take the seeds out, Banana - cut lenghthwise half but don't peel it. Now grill thoes with cut side down, till tender.
In the mixer add some strawberries or raspberries, honey/sugar and blend till smooth. If you don't like seeds in the berries sieve the sauce. Taste and add sugar if it's sour.

On the plate keep the grilled fruit and if you like put vanilla icecreame, now pour some sauce. Just grilled fruits & sauce also tastes yummee !!
Your grilled dessert is ready to enjoy !!

Veg Kabobs -

paste of - mint, cilantro, Cumin, coriander, red chili powder, salt
Paste should not be very watery. It should stick to the veggies and paneer or tofu.


Paneer or Extra firm Tofu cubes - approx 2" in size.
Pearl onions ( i like grilled red onions so I use bite size chunks of normal red onions)
Pineapple chunks preferably fresh, but you can use canned.
Cherry or grape tomatotes
Green bell peppers - cut in bite size chunks

Marinate everything separately for atleast 1/2 an hour before u start grilling.

Soak the wooden skewers in water for 1/2 hour

Now arrange tomato, paneer/tofu, bell pepper, pineapple on the skewer leaving atleast 1 inch space at oth ends of skewer.

Now grill this to perfection :-) It takes around 5 mins to grill - of course depends on grill etc :D

To suppliment this you can make just plain rice with salt. Add saffron to it after it's done cooking. It gives the vibrant yellow-orrange color to part of rice.

Now add the remaining marinate paste to this rice.

For dessert - you can either BBQ fruits or make skewers of all the melon pieces. Kids love to make skewers and eat the fruits off the skewers :-)

One more interesting recipe -


2 red bell peppers
2 green bell peppers
2 red onions
Cut these vegetables in bite size chunks.

Rosemerry sprigs or Basil sprigs

Mix the following ingredients well
1/8 cup balsamic vinegar
1/8 cup Vegetable oil
Sugar
Salt
Black Pepper

Marinate the peppers and onion with rosemery or basil sprig in the dressing for at least 30 minutes.
Now take a basket that goes on the grill drain the dressing and then put veggies in the basket. BBQ till done. Now take it out of the grill and pour it in a big bowl. Add the remaining dressing (or howmuchever desired) to this and then Enjoy it with piece of bread. Veggies should be little crunchy.

You can add yellow/green zukini, Asparagaus, big garlic cloves to it too.
