काकडीचे थालीपीठ

ही recipe माझ्या आजीने मला शिकवली

काकडी किसून घ्यायची त्यात मीठ, थोडा हिंग, हळद आणी मिरची बारिक कापुन किंवा better still कुटून घालायची व थोडावेळ तसंच ठेवून द्यायचं यामुळे काकडीला पाणी सुटतं मग त्यात मावेल एवढं तांदळाचं पीठ घालायचं व तव्यावर थापून थालीपीठासारखं ( भाजाणीच्या) भाजायचं खुप छान लागतं

तांदळाच्या पीठाऐवजी ज्वारीचं पीठ, किंवा भाजाणी आणी चण्याचं पीठ एकत्र असंही करता येईल पण तांदळाच्या पीठाची चव सगळ्यात चांगली लागते आणी थालीपीठ हलकं होतं

I usually get thalipeeth bhaajaNi from Vijay
Stores in Ville Parle. It is sold in 250 G
packets and it stays fresh for a long time.

If you can get the packets, thalipeeth is real EASY.

Just add chopped scallions (paaticha kaandaa),
fresh corriander and salt to taste and enough
water to make the dough. Heat oil in a non stick
skillet and form the thalipeeth on the skillet
directly.

You can also cheat by forming the thalipeeth on a
sheet of butter paper and then transferring it to
the skillet. Better chance of getting a circular
shape that way.

Once you get the thalipeeth on the skillet, make
4-6 holes in it, with the bottom of a spoon.
Pour oil around the edges and in the holes and
move the thalipeeth around gently. Fry on both
sides.

Serve with ghee, butter, lasun-tikhat ( again
from Vijay Stores )

थालिपिठासाठी भाजणी उरली नसल्यास घरात असलेले गव्हाचे, ज्वारी किंवा बाजरीचे, तांदुळाचे पीठ अन थोडे बेसन हे सर्व एकत्र करावे. त्यापूर्वी ही पीठे तेल न घालता कोरडीच कढईत २ मिनिट रंग बदलु न देता पटापट परतुन गरम करावी. अन गार झाले की नेहेमीप्रमाणे कांदा,ओवा, कोथिंबीर,तिखट, मीठ घालुन थालिपीठ लावावे. नेहेमीप्रमाणे छान खमंग होते. मात्र पीठ गरम करावीतच नाहीतर बाधतात.

आमच्या गावी तिखट भाकरी म्हणुन प्रकार करतात. त्यालाच थालिपिठपण म्हणतात. ज्वरीचा भाजलेला किंवा उकडलेला हुरडा दळुन आणला जातो. त्यात चिरलेला कांदा, हिरवी मिरची, लसुण, जिरे, मिठ वाटुन घाताअत. हे पिठ चांगले मळुन घेतेले जाते. केशर ने म्हटल्याप्रमाणे ते ओल्या कापडावर थापले जातात. त्यात साधारण चार बाजुला चार आणि मध्ये एक असे बोटाने छिद्र पाडले जातात आणि मग ते तव्यावर उलटे करुन टाकतात. त्यावर तेल सोडुन दोन्हि बाजुने खमंग भाजतात. गरम गरम थालिपिठ आणि गुळाचा खडा.( तोंडाला पाणी सुटेल आता माझ्या)
मी दिनेशने सांगितल्या प्रमाणे तव्यावर थापुनच करते. सवयीने ते पातळ थापणे पण जमते. भाजणी करताना मात्र सगळे घटक मी समप्रमाणातच घेते.(प्रत्येकी पाव किलो) गहु, ज्वारी, बाजरी, मुग, मसुर, हरभरा, वाटणे, चवळी, मठ, तांदुळ, उडीद. सर्व कडधान्ये घेताना ते आख्खे आणि सालिसकटच घेते. ते वेगवेगळे खरपुस भाजुन घ्यायचे. थंड झाल्यावर एकत्र दळुन आणायचे. ही भाजणी बर्‍याच दिवस टिकते.
वेगवेगळ्या भाज्या घालुन वेगळ्या चवीचे थालिपिठ करता येतात. पिठ भिजवताना त्यात डांगर्/ लाल भोपळा किसुन घातला तर छान चवदार थालिपिठ होते.
भाजणी शिल्लक नसेल तर मग मुडिने सांगितलेला पर्याय आहेच की.
